Waking Up After Elective Amputation

Because of the way the hospital bed blankets were arranged, my catheter, and my lack of willpower, I did not see my newly amputated leg until two full days after the amputation. I was focused on recovery, medications, and family immediately post-op. I knew I would have to face my amputated limb eventually but I put it off for as long as possible.

Finally, the time came when my doctor was going to visit and I did not want to break down in front of him. When the nurse announced she was removing the catheter, I realized now is the time because I will need to use the bathroom. So, when physical therapy came in to help me transfer, I was forced to rip the bandaid off.

An Emotional Reunion With My Leg

How do you process your leg being amputated? How do you make it ok in that moment? I felt like I was pushed off of a cliff when I was forced to look at my residual limb for the first time. However, if it were up to me I probably would have stayed in that bed for weeks avoiding it.

I was scared. I looked at my limb and saw no hope. Additionally, I saw years of pain and hard work. I saw my life upsidedown. this is not what I had planned for my life while my kids were young. We were supposed to be playing and going on family vacations. Will I ever be able to enjoy that again?

A surprise Under My Surgical Dressing

When Doctor Ertl removed my surgical dressings, I was surprised to see a lineal suture rather than the horizontal wound I had been studying. I also had a HUGE “s” shaped cut and suture on the back of my knee. My husband and I questioned this and was told it was normal procedure.

I also questioned the dying black spots on my suture line. This would later become so much of a problem I had to have a second surgery but I did not know this at the time.

Confirmation Of A Correct Decision

Trying to cope with the decision I just made not knowing if I made the correct one, I asked Doctor Ertl his thoughts on my foot he had just removed two days earlier. He said it was destroyed on the inside and that the amputation was inevitable. This news helped rest my heart and gave me the willpower to proceed with this next new chapter of life.

Words are powerful and I would encourage whoever is reading this to be uplifting and truthful with your words. You never know who might be needing exactly what you have to say. But the opposite is true as well, you can very easily discourage the person you are talking to the point of giving up completely.

Let’s Start The Hard Work

After Doctor Ertl left, physical therapy came back to help me understand my new life. We practiced getting dressed, going to the bathroom, transferring to a wheelchair, walking on a walker, and going upstairs.

This was one of the hardest things I have ever done. Even though we had practiced these things at home before the amputation, I still had my leg to fall back on. Now it is gone! Completely! I have to learn these new things to live my life and I only have one more day to learn them before they send me home.

Experiencing The Last Holidays With My Foot Before Saying Goodbye Forever

I am in a unique situation where I get to decide if I will continue with unproductive surgeries or electively amputate my left foot. Being afforded this luxury, I took my foot on a tour of the things it will never experience again after amputation.

In the last year before my elective amputation, I got to celebrate my foot with each holiday as its last. Much like imminent death, my family and I took the time to grieve and fully understand the process of loss. The loss of my foot was constantly on my mind with every family gathering, birthday and holiday.

Feeling All Of The Seasons Before My Foot Will Never Feel Again

During this year of saying goodbye to my foot before amputation, I took my shoes off to feel the seasons in their entirety! I felt the snow and ice on my foot. I felt the green, spring grass so cool and crisp. I still remember the feeling of the hot concrete of summer on my broken dislocated foot. I made sure to close my eyes and fully appreciate whatever feeling I was experiencing at the time.

Understanding My Chronic Foot Pain In order To Say Goodbye

Along with feeling the seasons, I also pushed my foot to remind myself why I am choosing elective amputation over more surgeries. I walked and tried to run to feel the pain of the broken ankle. I went to the park and for a long walk with my family on my knee scooter to feel the frustration of not being able to participate. In tears, I sat on the bench at the museum to watch my kids play. In order to process saying goodbye to my foot before amputation, I needed to understand the good and the bad.

No Regrets After Saying Goodbye To My Foot Before Amputation

Because I was able to effectively feel the positive and negative feelings of saying goodbye to my foot before amputation, I have no regrets! I do not know what is going to happen after my amputation. Will my life be better? Will I have worse pain? I don’t know. But what I do know is that I have done my research, I have processed all my feelings and I am ready to conquer the next chapter of my life!

Why Would I Electively Amputate My Foot?

Before we cover the actual elective amputation day, here is a bit of a backstory. When I was 28 years old, I wrecked my motorcycle resulting in a snapped foot. Since then, I have had 4 surgeries, countless physical therapy hours, and chiropractic visits. I walk on my toes because my bone has healed in a pointed position called “drop foot”.

I have also adopted many holistic remedies and ways of life trying to save my foot from elective amputation. Unfortunately, I am living a poor quality of life and looking for an end to this madness! I have an incredible family that is excited to see the world! Except, as I am, I can’t. Is getting my foot amputated the answer?

The Day Before Elective Amputation

My elective amputation was done in Oklahoma City by Doctor Ertl because his family came up with the bone bridge procedure. I wanted the very best surgeon I was able to get.

My mom flew in to watch my kids the day before my husband and I flew out to Oklahoma City to have the surgery. We needed a sitter that could stay longer than expected in case the surgery did not go as expected.

Once we landed in Oklahoma City, we went to my pre-op appointments. I needed to do blood work and a covid test. the rest of the day was spent walking as much as we could. we went to see fun things and said a proper goodbye to my foot. That evening was spent reminiscing and praying for a smooth amputation and recovery.

The Day Of Amputation

I spent the entire day before and the morning of surgery crying buckets of tears. This is not what I expected to happen in my life. This was not the plan I had set into motion. But here I was, removing my lower leg and forever making my life physically different. Would my life be harder? Will I still be in pain? Would I be worse than before? Am I making the right decision?

I was in such a bad state of panic that Doctor Ertl ordered the nursing team to take me to pre-surgery where the anesthesiologist would give me an IV medication to help ease the gravity of the situation. But because I rarely take medication, it knocked me out cold within 4 seconds.

My husband stated it took a little longer than expected but that Doctor Ertl was in communication with him regularly.

I remember not being able to open my eyes but feeling my husband’s hand. He recalls that when he held my hand there was a strange transfer of electrical energy. almost like he was removing some of the fear and anxiety from me to help me heal. It is incredibly important to have trusted loved ones around when you are going through a traumatic situation.

When I Finally Wake Up

I woke up the next day and was in good spirits. I did not look at my foot that day. Since I had a catheter in I did not need to use the restroom and the bedsheets were arranged in a way that made it look like I still had a foot. I did not have any pain but there was a bit of adjustment that needed to be done for my pain management once my nerve block wore off.

I was able to eat and call my mom with the kids. We celebrated a successful surgery and prayed for the next steps to continue to be a smooth transition.

In the video above, my husband recalls the entire amputation process from his perspective which is helpful because he was the one awake the entire time. He also mentions his first reactions to seeing my amputated leg. “It was shocking.”

Next “Steps” After A Successful Elective Amputation

Before I left the hospital, we had physical therapy come in to help me learn to use equipment properly. We used the walker, and the wheelchair to help me navigate going to the restroom and even going up the stairs. I was surprised by the activity level but I wish I would have known to ask for simple instructions like how to get up from the floor.

Next, we made a post-op follow-up visit with Doctor Ertl 2 days after being released from the hospital. The nursing staff also made a few adjustments to my pain management medication. I was using a muscle relaxor and a narcotic for pain. we had to find the right timing, dosage, and combination that kept me pain-free.

I was released from the hospital, 3 days after my elective amputation and flew home 3 days later.

Serves: 4

Ingredients:

1.5 lbs ribeye steak shaved

Marinate of choice I used Brown Sugar and Bourbon

7 tablespoons of soft butter

1 red pepper

1/2 onion

4 cloves of garlic smashed

Hoagie rolls

Cheese of choice. I use American cheese and queso

Instructions:

Preheat oven to 350 degrees.

If you were not able to get your steak shaved at the butcher, put it in the freezer 30 minutes before cutting. This will help you shave it easier.

Chop veggies to your desired size.

Smash the garlic.

Hoagies:

Slice hoagies in half, lengthways.

Spread a thin layer of butter on each hoagie roll. Sprinkle with garlic salt and place face down on a cookie sheet.

Bake at 350 until lightly toasted.

Steak:

In a very hot skillet, add 2 tablespoons of butter until melted. Add shaved steak. Let it sit for 1 minute before stirring lightly to brown both sides. This will allow a crust.

Veggies:

In a hot skillet, melt 1 tablespoon of butter. Add all veggies and garlic. Stir until caramelized (browning and clear onion)

Assembly:

Turn hoagies face up on the cookie sheet.

Add mayo if desired.

Add cheese to each side of the bread.

Place steak and veggies on top of the cheese.

Hot tip: for added crunch and texture add cabbage shavings!

Place your homemade Philly cheesesteaks back in the oven until cheese is melted.

Serve:

Remove from the oven and put together your Philly cheesesteak sandwich.

On a serving plate, place your philly cheesesteak sandwich sliced in half. Serve with chips, fries, salad or any side of your choice! Enjoy!

Serves: 4

Ingredients:

1 large spaghetti squash

Extra virgin olive oil

1 large breast of chicken

Asian seasoning sauce of choice I use teriyaki chicken

1 red bell pepper

1 large celery stalk

1/2 zucchini

1 large carrot

4 cloves of garlic

3 straws of green onion

Roasted sesame seeds

Instructions:

Spaghetti squash:

Preheat oven to 350 degrees

Cut spaghetti squash in half long ways. Remove all seeds and loose strings.

Cover lightly with olive oil, sprinkle with garlic salt and turn face down on a cookie sheet

Allow to cook for 30 minutes. check your squash by trying to fork scrape the flesh. if it is hard to remove, allow it to continue cooking until it is spaghetti texture. Check your squash every 5-10 minutes after checking at 30 minutes to prevent overcooking.

Chicken and veggies:

Slice each vegetable into small bite sized pieces keeping them individual.

Smash garlic with a garlic press.

Cut chicken into bite size pieces. Add to a hot oiled skillet. Cook until almost finished.

add carrots and celery to the skillet. continue cooking until chicken is finished and carrots are almost soft.

Add all remaining veggies and sauce packet. Cook until warm but not hot as the veggies will get mushy.

Serve:

Scrape a generous portion spaghetti squash out of the rind and place in a serving bowl. Top with chicken and veggie sauce. Sprinkle with roasted sesame seeds. Enjoy your Asian Spaghetti Squash Boats!

Serves: 6

Ingredients:

24 oz of pasta of choice. I use Rainbow Pasta

2 breasts of chicken

5 tablespoons of butter

3 cloves of garlic

10 oz zesty Italian dressing

1 cup shredded or grated parmesan cheese

Suggested Chopped Veggies:

1 red pepper

1 bunch of green onion chopped

Pickled banana peppers

1 cucumber chopped

1 red onion chopped

Instructions:

In a large pot, boil water and cook pasta according to package instructions

Stir in the desired amount of zesty Italian dressing on pasta to keep it from sticking together. Place in refrigerator to cool.

Chop all vegetables and add to your pasta bowl.

Add any extra zesty Italian to taste. Enjoy your Zesty Chicken Pasta Salad!

Chicken:

In a large skillet melt 4 tablespoons of butter or oil on medium heat. Add chicken breast(s). Season with garlic salt.

Chop 3 cloves of garlic. Set aside.

Once one side of your chicken has browned, flip the chicken to brown the other side.

Remove chicken from skillet and shred with 2 forks. It will be pink inside.

Return chicken to the hot skillet with 1 tablespoon of butter and your previously chopped garlic. Stir together until browned. Remove from heat.

Serves: 4 rolls

Ingredients:

Bamboo mat

1 gallon zipper freezer bag or plastic wrap

2 cups of Sushi rice

3 tablespoons Sushi vinegar

2 tablespoons of sugar

1 tablespoon of oil

Salt to taste

Seaweed wraps

Cucumber

Cream cheese

Carrot shaved

Avocado

Salmon (cooked or of your comfort level) – research the proper way to eat raw meats before consuming.

Pickled ginger

wasabi

Sauce recommendations:

Spicy mayo

Duck sauce

Soy sauce

Instructions:

Measure 2 cups of uncooked sushi rice and rinse until water runs clear.

Drain completely and set aside covered with a damp cheesecloth or light towel for 1 hour.

Mix sugar, oil, vinegar, and salt until dissolved.

After the rice has been sitting for 1 hour, remeasure 2 cups of the rinsed rice (it expands) into a saucepan. Add 2 cups of water and bring to a boil.

Once boiling, turn the heat down to a very low simmer. Cover rice pan with a towel, replace lid tightly on top of the towel. Low simmer for 10 minutes. Remove lid and the towel to allow to cool for 5 minutes

Place rice onto a flat surface, preferably wood but a cutting board will be fine as well. Add vinegar mixture to the rice and gently mix together.

Cover your bamboo mat with the gallon zipper bag and seal shut.

Lay seaweed paper texture side up on the bamboo mat.

Cover seaweed paper with a thin layer of sushi rice. Leave 1 inch without rice at the end of the wrap. This will seal your roll and prevent it from unrolling.

Place desired contents on the front edge of your roll.

Begin rolling your sushi roll. As you roll use the tips of your fingers to tuck in the contents across the entire roll keeping a tight wrap.
Continue rolling but before finishing, wet the last inch of seaweed paper. This will help the roll stick together. Continue rolling and finish by laying down the last bit of paper onto your roll with your fingers if necessary.

Serve:

Wet a smooth-edged knife before slicing. Begin by slicing the roll in half. Start slicing bite-size rolls at the center slicing ¼ inch pieces until you reach the end.

Place sushi rolls on a serving plate. Serve with wasabi, pickled ginger, spicy mayo, or any desired Asian sauce. Enjoy!

Serves: 4

Ingredients:

1 fresh baked loaf of bread from the bakery

1 Au Jus gravy mix packet

8 tablespoons of butter

Garlic salt

12 oz thin sliced roast beef

1 cup of shredded mozzarella cheese

1 cup of grated parmesan cheese

Instructions:

Preheat oven to 400 degrees

Divide roast beef into four equal portions and lay flat on a baking sheet making four flat piles. Top with mozzarella and parmesan cheese. put in oven for 15 minutes or until cheese melts, bubbles and starts to brown on the edges.

Cut your fresh loaf of bread into 8 equal slices.

Cover each side of every slice of bread with melted butter. Add garlic salt to only one side of the bread before placing it in the oven for 15 minutes or until slightly toasted.

In a small saucepan, cook Au Jus gravy mix to package instructions.

Serve:

Place a toasted bread slice garlic salt down on a serving plate. With a spatula, remove a roast beef with cheese stack and place it on the bread slice. Add the second bread slice on top, garlic side up. Slice the sandwich on a diagonal.

In a small bown add 1/2 cup of Au Jus gravy. Place the bowl on the plate along side the sandwich. Enjoy!

Ingredients:

4 chicken breasts

12 tablespoons of butter

2 hand fulls of fresh french style green beans

Sesame seeds found in seasonings isle

5 cloves of garlic

Lawry’s garlic salt

6 russet or red potatoes

1 cup of milk

1 cup of grated parmesan cheese

3 straws of green onion

Brown gravy packet

Instructions:

In a large skillet melt 5 tablespoons of butter. place chicken breasts in skillet and brown on each side. Sprinkle with garlic salt.

In a large pot, boil peeled and chopped potatoes until soft. Drain and place in a mixing bowl. Add 4 tablespoons of butter, 1 cup of milk and garlic salt. Mix with a hand mixer or mash with a potato masher until smooth. Stir in parmesan cheese.

Wash and drain green beans before placing them into a medium skillet with 3 tablespoons of butter. Mash 5 cloves of garlic and add to the green beans. Cook until slightly soft. Sprinkle with sesame seeds.

Make brown gravy according to package instructions.

Serve:

Place 1 piece or a partial piece of chicken on a serving place. Scoop a generous helping of mashed potatoes, top with sliced green onion. Add the desired amount of buttered, fancy, french green beans! Smoother with brown gravy. Enjoy!

Serves: 5

Ingredients:

16 oz of angel hair pasta

1 chicken breast

3 tablespoons of butter

5 eggs

2 chopped carrots

1 bunch of green onion

1/2 red bell pepper

1 cup of frozen peas

5 cloves of garlic

1 cup of frozen corn

1 bag of precut cabbage

Asian sauce of your choice. I suggest sweet and tangy beijing sauce, duck sauce, sesame sauce or soy sauce.

Instructions:

In a large saucepan, cook pasta to package instructions, rinse and set aside.

In a large skillet melt 3 tablespoons of butter and add small cubbed chicken chunks. Once slightly browned, add remaining chopped vegetables except for the cut cabbage.

Once the chicken is cooked, remove it from heat. Do not over cook the vegetables.

In a small skillet scramble 5 eggs and add to your chicken and vegetable mixture.

In a large bowl, combine all ingredients except sauce.

Serve:

To serve, place a generous helping of Asian noodles in a serving bowl. Top with your favorite Asian sauce. Enjoy!

Serves: 4

Ingredients:

10 Taco size flour tortillas

1 lb of steak or chicken or both

1 red pepper

slices of red onion

1 fajita seasonings mix

6 tablespoons of butter

Suggested toppings:

sour cream

shredded cheddar or mozzarella cheese

tomato

avocado

salsa

Fajita bowl:

Thinly sliced cabbage

Instrructions:

In a large skillet melt 4 tablespoons of butter and add protein of choice.

Wait for your chicken or steak to brown on one side then flip it over continuously covering it with the melted butter.

Once it has browned on both sides, remove it from the skillet and cut thinly across the grain.

Add it back into the hot skillet with an additional 2 tablespoons of butter, sliced onion, sliced red pepper, and fajita seasonings.

Serve:

Traditional fajitas: place your tortilla on a serving plate, add your fajita meat and vegetables, top with desired toppings. fold one end towards the center and roll into a burrito.

Fajita salad bowl: lay a bed of cabbage and top with chopped fajita meat and veggies. Add any additional toppings. Enjoy!

Serves: 5

Ingredients: Basically anything you like in a sushi roll

2 cups of uncooked rice or quinoa

1 fillet of wild caught salmon

3 tablespoons of butter

1/2 cup of soy sauce

1/4 cup of brown sugar

Suggested toppings:

1 large avocado

pickled banana peppers

4 oz of cream cheese

3 medium carrots thinly sliced

1 large cucumber

1/2 red onion

duck sauce, any Asian sauce or spicy mayo (siracha sauce and mayonnaise)

Instructions:

In a large saucepan cook 2 cups of rice or quinoa according to package instructions.

In a large skillet, melt 3 tablespoon of butter or oil. Add soy sauce and place fish scales up and flesh down. Cook on medium heat 6 minutes.

Flip fish over, sprinkle brown sugar on top and finish cooking scales side down.

chop all vegetables into bite size pieces

Serve:

Scoop out rice to cover the bottom of a serving bowl. Top with shredded salmon (watch out for the tiny bones) and any desired chopped vegetables.

Add small bits of cream cheese and drizzle desired Asian sauce on top. Enjoy!

Ingredients:

Premade pizza dough

1 chicken breast

4 tablespoons of butter

4 cloves of smashed garlic

12 oz of crumbled bacon

8 oz of shredded mozzarella cheese

1 small bunch of cilantro

1 small bunch of green onion

1 red pepper

Ranch Dressing

Sriracha sauce

1 cup of real mayonnaise

Pickled banana peppers

1 cup of grated parmesan cheese

Easy White Sauce:

8 tablespoons (1 stick) of Butter

1 cup of flour

4 cups of milk or milk substitute

8 oz (1 block) of cream cheese

1 cup of grated parmesan cheese

Seasonings of choice, I recommend parmesan garlic or Italian flavorings.

Instructions:

Preheat oven to 400F

In a large skillet fry bacon until crispy. Chop into crumble size pieces.

Combine 1 tablespoon of siracha and 1 cup of mayo in a plastic zip bag. Cut a small corner off the bag to allow squeezable spicy mayo and set aside.

chop cilantro, green onion, and red pepper into small bite-size pieces.

Garlic Chicken:

In a large skillet melt 4 tablespoons of butter on medium heat. Add chicken breast(s). Season with garlic salt.

Chop 3 cloves of garlic. Set aside.

Once one side of your chicken has browned, flip the chicken to brown the other side.

Remove chicken from skillet and shred with 2 forks. It will be pink inside.

Return chicken to the hot skillet with 1 tablespoon of butter and your previously chopped garlic. Stir together until browned. Remove from heat.

Easy White Sauce:

In a large saucepan, melt 1 stick (8 tablespoons) of butter. Allow butter to warm stirring regularly until it starts to turn tan.

Add flour to the butter stirring occasionally until it turns brown and has a nutty aroma. This is your roux used to thicken your alfredo sauce.

Add 4 cups of milk to your roux sauce and return it to a low simmer.

Drop in your block of cream cheese cut into medium chunks. Melt together and remove from heat.

Add desired seasonings to your alfredo sauce. I recommend parmesan garlic or Italian flavorings.

Tip: If your sauce is too thin, add parmesan cheese to desired thickness. If your sauce is too thick, add milk and thin to desired thickness.

Assembly Of Garlic Chicken Alfredo Pizza:

Place your pizza crust dough on an oven-safe baking sheet. Check to see if your pizza crust needs to be pre-heated.

Once the pizza crust is ready, cover the crust with your Easy White Sauce.

Top with your garlic chicken, bacon, mozzarella cheese, cilantro, green onion, and red pepper.

squeeze desired amount of ranch and spicy mayo on top before baking.

Place garlic alfredo pizza in the oven for approximately 20 minutes or until cheese melts, bubbles, and starts to brown.

Remove pizza from the oven and set it aside to cool slightly.

Serve:

Once cooled and more easily cut, top with pickled banana peppers and parmesan cheese. Cut into pizza slices and serve with

ranch on the side. Enjoy!

Ingredients:

1 large spaghetti squash

14 oz link sausage

1 red pepper

1 small bunch of green onion

8 oz of shredded mozzarella cheese

4 cloves of smashed garlic

Red Sauce:

24 oz jar of marinara sauce

Easy White Sauce:

8 tablespoons (1 stick) of Butter

1 cup of flour

4 cups of milk or milk substitute

8 oz (1 block) of cream cheese

1 cup of grated parmesan cheese

Seasonings of choice, I recommend parmesan garlic or Italian flavorings.

Garlic Cheesy Bread:

1 French bread loaf

5 tablespoons of butter

Garlic salt

Instructions:

You can do all white sauce or all red sauce or do both! It is up to you and what your family likes.

Preheat oven to 400F. Cut open spaghetti squash longways. Scoop out center seeds and strings leaving only flesh. Drizzle with olive oil and sprinkle with garlic salt. Place on baking sheet flesh down for 30 minutes or until a fork can easily remove spaghetti-style strings. Do not let it bake too far, it will become mushy.

Slice sausage into bite-size pieces and place in a large skillet on medium heat. cook until browned on both sides.

If you are doing red sauce, put it in a sauce pan and heat it gently until hot but not boiling.

Spaghetti Squash Boats

Spaghetti Squash Boat Assembly And Finish:

Once all ingredients are finished cooking, its time to assemble.

Gently fork the flesh of the spaghetti squash to make “spaghetti” and leave it in the rind.

Next, add your sauce on top. Red sauce, white sauce or both.

Add your sausage to the spaghetti squash boat and top with mozzarella cheese.

Place boats back in the oven on broil for 2 minutes or until bubbles brown.

Garlic Cheesy Bread:

Slice french bread loaf into desired thickness and cover both sides with butter.

Sprinkle garlic salt on top side and add desired amount of shredded mozzarella cheese.

Place in oven with spaghetti squash boats for 10 minutes or until cheese melt and starts to brown.

Serve:

You can eat straight out of the boat or serve it in bowls. Add a slice of garlic cheesy bread. Enjoy!

Serves: 6

Ingredients:

1/2 lb of ground sausage or hamburger

32 oz of beef broth

5 cloves of garlic

2 thinly sliced carrots

2 celery stalks

4 red potatoes

1 head of broccoli

1/4 head of cauliflower

1 small bunch of green onion

1/2 cup Frozen or fresh peas

1 bag of frozen green beans

1 cup of frozen or canned corn

Spices of your choice. I suggest seak or hamburger seasonings.

Biscuit mix of your choice

Instructions:

In a large pot, combine all ingredients except ground sausage/hamburger on medium heat.

In a large skillet, cook ground meat completely.

Add ground meat to your soup pot and bring to a light simmer. Once potatoes are soft, remove from heat and allow to cool.

Make biscuits according to package instructions.

Serve:

Dish a generous portion of soup into a serving bowl and top with freshly chopped green onion. Serve with a warm biscuit. Enjoy!

Ingredients:

Serves: 4

pita bread

4 cups of shredded cheese. I suggest mozzarella

2 breasts of chicken or steak cut into strips

garlic salt

cabbage or pre cut cabbage bag

red onion

banana peppers

Tzatziki Sauce:

2 cups of whole plain greek yogurt

1 tablespoon of lemon juice

1 tablespoon extra virgin olive oil

3 cloves of garlic

1/2 teaspoon of sea salt

1 finely grated cucumber

2 tablespoons of chopped dill

Salad:

Lettuce of choice

Extra cucumber

Bacon or bacon crumbles

Instructions:

Tzatziki Sauce:

For best results make Tzatziki Sauce the night before or several hours before using.

In a medium bowl combine yogurt, lemon juice, oil, salt, and smashed garlic.

Just before using, shred cucumber and place it on paper towels or cheesecloth. Squeeze all the water out and add to your sauce.

Chop the dill and add to your sauce.

Stir everything together before using.

Pita:

Cut chicken or steak into strips and add to hot oiled skillet. Add garlic salt, butter and smashed garlic for added flavor.

Cook as desired.

Cut red onion into strips.

Slice cabbage into tiny strips.

Cut pita bread in half and open the pocket. Fill with chicken or steak, tzatziki sauce, onion, banana peppers, shredded cheese and cabbage.

Salad:

To make this into a delicious salad, cut up your greens, add chicken, cucumber, banana peppers, shredded cheese, crumbled bacon, cabbage and tzatziki sauce! Enjoy!

Ingredients:

4 large russet potatoes

Leftover pot roast or any meat of choice

12 oz of bacon

2 cups of grated parmesan cheese

2 cups of sour cream

1 small bunch of green onion

Favorite barbeque sauce

Favorite ranch dressing

Instructions:

Preheat oven to 375. Wash the outside of your potatoes to remove any dirt. Stab the potato several times with a fork to allow steam to escape. Place in the oven for 1 hour turning at 30 minutes.

In a larger skillet cook bacon to crispy, cut into sprinkle size pieces, and set aside.

Warm leftover meat or cook any meat to desire. (I used a chuck roast the day before in the crockpot) to warm the leftover pot roast, shred it and place it in a large oiled skillet on medium heat just until warm.

Once potatoes are finished, cut length way and smoosh ends together to open up potato.

Top with desired toppings! Warmed meat, bacon, parmesan cheese, sour cream, green onion, ranch, and barbeque sauce. Enjoy!

Ingredients:

1 cup of uncooked rice

32 oz of chicken stock

1 chicken breast or meat of your choice

Small bunch of cilantro

1 16 oz can of black beans

2 cups of Salsa

1 cup of frozen corn

1 cubbed red pepper

1 small bunch of green onion

8 oz of cream cheese

1 medium avocado

Frito scoops

Instructions from scratch:

In a medium saucepan pour 2 cups of chicken stock and one cup of rice and cook to package directions.

Chop red pepper and green onion into small pieces.

Cut chicken into small pieces.

In a large pot add remaining chicken stock, cubbed chicken, undrained black beans, salsa, corn, red pepper, and green onion to low heat.

Once the rice is finished cooking, add it all to your soup pot.

Stir together well and bring to a slight boil until chicken is cooked through completely.

Remove from heat, add cream cheese and stir until melted.

Instructions from leftovers:

Same instructions as above but add your leftover rice, chicken, beans, veggies to the soup pot along with any fresh missing ingredients you need to add. Bring to a low simmer and remove from heat. Add cream cheese, stir together until melted.

Serve:

Scoop a generous portion of soup into a serving bowl. Top with chopped cilantro, cubed avocado, and shredded cheese. serve with Frito scoops on the side. Even better, serve with Jalapeno Frito Scoops! Enjoy!

Suggested toppings:

1 15oz can of black beans

Frozen corn

Tomato

Red pepper

Red onion

Pickled banana peppers

Hot sauce

Sour cream

Nacho Doritos or chips of choice

Homemade french dressing:

Equal parts of sugar, ketchup, extra virgin olive oil, apple cider vinegar

Instructions:

In a large skillet, add cubed chicken and cook to taco package instructions.

Set aside.

Thinly slice lettuce and add to individual salad bowls. Top each salad with individual desired toppings.

Salad dressing: in a jar or small container with a lid, combine equal parts of sugar, vinegar, ketchup, and oil. Shake well and store leftovers in the refrigerator for up to one week.

Add the desired amount of homemade french dressing to your taco salads. Enjoy!

Ingredients:

2 chicken breasts

2 cups of Rice

4 cups of chicken stock

1 Sesame sauce pouch

1/2 cup frozen peas

2 Carrots

3 cloves of garlic

1 small bunch of green onion

4 Eggs

1 bag of frozen french green beans

2 tablespoons of butter

1 teaspoon of garlic salt

1 jar of sesame seeds

Instructions:

Rice:

In a large saucepan add the chicken stock and rice. Cook to package instructions.

Finely chop carrots, green onion, and garlic.

Add peas, garlic, green onion, and carrots to a medium-sized bowl.

Scramble eggs. Once finished, add to the veggie bowl.

Once the rice is finished cooking, combine the veggie bowl and the rice together and set aside to cool.

Green beans:

Melt butter in a medium skillet on medium heat.

Add frozen green beans and stir until soft and starting to brown. Sprinkle with garlic salt and sesame seeds.

Chicken:

Cut chicken into bite-size pieces. Add to large skillet following sauce packet instructions.

Serve:

Place rice on a serving plate. top with your favorite Asian dressing such as soy sauce, duck sauce, sweet and sour, or sesame.

Add chicken and green beans to separate areas of the plate. Enjoy!
