Sheet Pan Hawaiian Chicken

Serves: 4

Ingredients:

3 chicken breasts

1 fresh pineapple cubed

2 red peppers

1 red onion diced

1 bunch of cilantro

Dressing of choice, I recommend sweet chili sauce.

This dish is wonderful by itself but if you would like to add a rice base, you need 1 cup of rice and 2 cups of chicken stock. If you would rather have tortillas (as pictured) choose tortillas of choice. Street taco tortillas are my personal preference.

Instructions:

Preheat oven to 400 degrees Fahrenheit.

On a large lined cookie sheet evenly space the cubed pineapple, cubed chicken chunks and red pepper.

Bake for 30 minutes or until chicken is cooked and starting to brown on the edges.

If you are making a rice base, use 1 cup of rice and 2 cups of chicken broth instead of water and cook according to package instructions.

To Serve:

Choose your base of rice, tortillas or no base. Add a generous scoop of your sheet pan hawaiian chicken. Top with shredded red onion and cilantro. Drizzle your dressing of choice on top and ENJOY!
