
Serves: 4
Ingredients:
1 breast of chicken
7 tablespoons of butter
4 cloves of garlic
Soy or stir fry sauce of choice
1 cup of uncooked rice
2 cups of chicken stock
Suggested Veggies:
Red bell pepper
Pineapple
Snap peas
carrot
cashews
broccoli
cauliflower
Instructions:
Rice:
In a large saucepan add 2 cups of chicken stock and 1 cup of rice and cook to package instructions.
Chicken:
In a large skillet melt 3 tablespoons of butter on medium heat. Add the chicken breast cut in half to make 2 thin chicken breasts. Season with garlic salt.
Chop 3 cloves of garlic. Set aside.
Once one side of your chicken has browned, flip the chicken to brown the other side.
Remove chicken from skillet and shred with 2 forks. It will be pink inside.
Return chicken to the hot skillet with your previously chopped garlic. Stir together until browned. Remove from heat.
Veggies:
Chop all desired vegetables and set aside.
In a large skillet or wok, melt 4 tablespoons of butter.
Add desired ingredients (not the chicken) to the hot skillet or wok and heat. Do not allow them to get fully cooked and soft.
To Serve:
In a serving bowl, add 1/2 cup of cooked rice with a generous scoop of vegetables on top. Add the desired amount of chicken and drizzle with your favorite stir fry sauce. ENJOY your easy chicken stir fry!
