Cheesy Chicken And Broccoli Rice Casserole

Serves: 4


1 boneless skinless chicken breast

1 cup of chicken stock

2 cups of broccoli florets

1 10oz can of cream of chicken soup

2 cups of precooked rice

2 cups of shredded cheddar cheese

Garlic salt to taste

Planko bread crumbs


Pre heat the oven to 350 degrees Fahrenheit.

Chop the chicken breast into small cubes.

In a large mixing bowl, add chicken chunks, chicken stock, cream of chicken soup, precooked rice broccoli florets, 1 cup of cheddar cheese and sprinkle with garlic salt before mixing well.

In a parchment paper lined oven safe dish, pour rice and chicken mixture and spread evenly. Sprinkle 1 cup of cheddar cheese on top. Layer Planko bread crumbs to make the desired crust outcome before putting it in the oven.

Bake at 350 for 25 minutes or until cheese is completely melted, edges are turning golden brown and the chicken is completely white.

To Serve:

In a large serving bowl, scoop out a generous portion of your homemade cheesy chicken and broccoli rice casserole. ENJOY!
