Homemade Creamy Tomato Soup

Serves: 6

Ingredients:

3 Tomatoes, peeled and seeded

64 oz can of Tomato Juice. Not V-8 and not vegetable juice. Just tomatoes.

1/2 oz package of basil

8 tablespoons of butter

1 cup of heavy whipping cream

Instructions:

Warm the tomatoes, basil, and butter in the tomato juice, but not boiling. Use an immersion blender (or blend before warming) to bash up the tomatoes.

Once warmed and cooked well (not boiling) stir in the cream.

To Serve:

Place a generous scoop of your homemade creamy tomato soup in a serving bowl. Add crackers, a cheese sandwich or your favorite side to compliment this delicious soup and ENJOY!
