1 Chicken breast
5 tablespoons of butter
1 small stalk of celery
3 straws of green onion
1/2 cup of chopped walnuts
1/2 cup of dried cranberries
1/4 teaspoon of onion powder
1/4 teaspoon of garlic powder
Pepper to taste
In a large skillet melt 4 tablespoons of butter on medium heat. Add chicken breast(s) cut in half to make half the thickness of the breast. Season with garlic salt.
Chop 3 cloves of garlic. Set aside.
Once one side of your chicken has browned, flip the chicken to brown the other side.
Remove chicken from skillet and shred with 2 forks. It will be pink inside.
Return chicken to the hot skillet with 1 tablespoon of butter and your previously chopped garlic. Stir together until browned. Remove from heat.
Once the fried chicken has cooled, chop it into smaller pieces and place in a large mixing bowl.
Chop celery, green onion, and apples into smaller than bite size pieces. Add chopped walnuts, dried cranberries, and chicken. Stir all ingredients together.
Add real mayo and stir to desired texture and taste.
Sprinkle garlic powder, pepper and onion powder then stir mixture once again.
This incredible chunky chicken salad can be eaten by itself, as a dip on crackers, in a sandwich or on thinly sliced apples! The choice is yours! Enjoy the best chunky chicken salad you will ever make!
