1 Orange chicken glaze packet
2 breasts of chicken
1/2 cup of olive oil
1 cup of rice of choice
2 cups of chicken stock
1 red bell pepper
1 bunch of green onion
4 tablespoons of butter
1/4 cup of peas
In a medium saucepan bring 2 cups of chicken stock and 1 cup of rice to a boil and cook to rice package instructions. (if you have previously cooked rice and want to make fried rice, skip down to Fried Rice)
Chop the onion into small pieces. Cut 1 cup of pineapple and 1 whole red pepper into bite-size chunks. Combine all 3 and set them aside.
Chop chicken breast into bite-size pieces.
Coat chicken chunks in flour and set aside.
Add olive oil to a large skillet on medium heat.
Once the oil is heated, add chicken, and stir until browned.
Add onion, red pepper, and pineapple to the skillet. Stir for 1 minute.
Drizzle your orange chicken glaze over top and finish per package instructions.
If you have previously cooked rice, place it in a large skillet with 4 tablespoons of butter. Allow it to fry before adding a chopped carrot, a few peas, diced green onion, 1 scrambled egg, and 1 tablespoon of soy sauce.
Place a generous scoop of rice in the bottom of a serving bowl. Top with orange chicken then sprinkle sesame seeds on top! Enjoy your delicious homemade orange chicken!
