Homemade Sausage Egg Rolls With Fried Rice

Serves: 5

Ingredients:

1 package of egg roll wraps

16 oz ground sausage

5 scrambled eggs

1 cup of peas

8 oz bag of coleslaw shredded cabbage

3 cups of beef stock

1.5 cups of rice of your choice

Soy sauce

1.5 tablespoons of ground cumin

Egg roll dipping sauce like duck or sweet chili sauce

Instructions:

Brown your ground sausage completely and set aside.

Scramble all 5 eggs and set them aside.

Combine scrambled eggs, ground sausage, cumin and cabbage in a mixing bowl.

Egg Rolls:

Lay out one egg roll wrap on a clean flat surface. Brush water on all 4 edges of the egg roll wrap as the sealant. Spoon a small portion of the cabbage mixture into the center of the wrap. Begin by rolling one corner tucking it over of the stuffing and roll to the middle of the wrap. Tuck both ends into the center and continue rolling to create a closed egg roll.

In a deep fryer or a large oiled skillet, warm the oil and carefully place the egg rolls in. Continue to roll the egg rolls making sure to fry to a golden brown on all sides. Remove from the oil and set aside to cool.

Fried Rice:

Fried rice is best made with pre made cold rice. if you are making fresh rice, empty the 1.5 cups of rice and 3 cups of beef broth and cook to package instructions.

If using cold rice, melt 3 tablespoons of butter to a wok or skillet. Fry the rice until warmed.

Once you have warmed (or cooked) your rice, add peas and 1 full cup of cabbage mixture. toss in the skillet or wok until hot. Sprinkle with soy sauce to taste.

To Serve:

Place a generous portion of fried rice in a serving bowl. Place an egg roll on a small serving plate with a side of soy sauce or your favorite duck sauce. ENJOY your homemade sausage egg rolls with fried rice
